Fish soup is a dish commonly found islandwide, with stalls hawking their fare in just about every coffee shop or hawker centre. Good fish soup, however, is another matter entirely.

Fish soup, as its name suggests, is freshly sliced fish – often batang or grouper – cooked in a broth with vegetables. It is usually accompanied by rice or noodles that may come on the side or be added to the soup itself. Some variations also include frying the fish beforehand, then adding it into the soup, or, evaporated milk is sometimes added to give the soup a richer body.

Unlike its competitors, Sum Xing uses only the freshest and locally sourced Giant Grouper. This fish is superior to the other types of Grouper, and often one of the most expensive. 

At Sum Xing, they have both fried fish soup and sliced fish soup, with every bowl made to order with fresh fish used.
